Quick meals

Pork Fried Rice

 
Ingredients
2 or 3 cups white rice-cooked and refrigerated (Left overs work great for this)
6 oz pork sirloin
1/2 cup frozen peas and carrots
1 egg-scrambled
Green onion
Soy sauce
Terriyaki sauce
 
Directions
Cut pork into tiny pieces and place in tinfoil cover with terriyaki sauce and bake as a tinfoil pocket at 350 for about 25 minutes.
While that is cooking...scramble 1 egg and set aside. Chop green onion (as much as you like)
Put cold rice in pan and sprinkle with soy sauce, stir while doing so. it should slightly discolor the rice into a light brown. Add cooked egg and frozen peas and carrots. Add pork when cooked thoroughly. Stir in green onion right before serving.
The picture does not do it justice...it is easy and I use this when I have left over rice. Some how I always make too much rice-not at least I have a way to use it.


S'mores made easy

 

S'mores Made Easy

 
 
Everyone loves a s'more but we don't always have a campfire nearby. So try this when you  have a craving for a yummy treat without ANY mess. Put you oven on HIGH broil. Put tin foil on a cookie sheet. Place a gram cracker on the foil, top with chocolate bar or chocolate chips them mini marshmallows. Place in oven for just a few minutes. DO NOT LEAVE the kitchen...it takes just a few minutes-enough to pour a glass of cold milk. The nice thing about doing it this way is that you can make a whole tray of them so everyone gets one at the same time. Clean up it easy....throw the tin foil away and your done. ENJOY...I love those little crunchy marshmallows the most.
