Chocolate Raspberry Cupcakes

 

Ingredients

1 Chocolate cake mix

1 Pint of Raspberries

1/2 cup Tablespoons Raspberry Jam

1 Pint Whipping Cream

1-2 Tablespoons Sugar

Chocolate frosting

 

Make the chocolate cake mix per the instructions on the package.
In a small bowl mix the jam until smooth and fold in raspberries (reserve some for the tops)
Fill the cupcake papers 1/3 with cake mix put one of the raspberries that you folded in the jam. Then take a small amount of cake mix and put it on top of the raspberry. See the picture above.
Bake per the instructions on the cake mix.
While baking prepare whipping cream. Add sugar as needed to taste.
When cupcakes are cool top with chocolate frosting and then whip cream and a raspberry.
